I can’t tell you how quickly this disappeared at our last family gathering. You have to try this!🤤 Ingredients💕 For the base: 250g shortbread biscuits 80g unsalted butter Cheesecake Filling: 250g fresh raspberries 250g white chocolate 500g full fat cream cheese 100g icing sugar 350ml double cream To decorate: 500g fresh raspberries Method👩🏻🍳 ✨ Blitz the shortbread in a food processor to a fine crumb. (If you don’t have a food processor, just pop the biscuits in to a zip lock bag and crush with a rolling pin!) Melt the butter, add to the crushed biscuits and then press the mixture down firmly into an 8 inch springform tin. Set aside. ✨ Next melt the white chocolate and set aside to cool. Then whisk together the cream cheese and icing sugar until smooth. Pour in the double cream and whisk again. Finally pour in the cooled white chocolate, and fold in the fresh raspberries. ✨ Spread the cheesecake mixture over the biscuit base, smooth over and chill in the fridge overnight. (Another reason I love this recipe… you can make it ahead of time!) To release from the tin, run a butter knife around the edges and carefully remove.
